The Coffee Virgin Experience

Entimos Coffee Roasters helped loose my "virginity" to specialty coffee with an experience I will never forget! You read that correctly, I was a coffee virgin until recently.
I would not consider Starbucks or Dutch Bros to be "legit" and would assume great tasting coffee should be ordered at a hipster-like establishment. What do I know, right? Coffee Virgin... well until recently.
I was at Morgan's Mill with my laptop and Earl Grey 20 oz loose leaf tea, when an Instagram message popped on my phone..."Try the Colombia." The sender? 36 year old co-owner and roster of Entimos Coffee Roasters, Tim Tubra.
I messaged Tim on Instagram a few days prior, embarrassed and confessed unsure how, when, and why I was his friend on social media. Ha! He replied and complimented my nice words, said thanks, and probably thought I was crazy!
Entimos Coffee Roasters is a collaboration by two outdoorsy friends, Tim Tubra and Matt Dittemore, of Oregon. Entimos is Greek and means 'esteemed or held in high regard.' I was very intrigued to try but not sure where to begin. The man behind Entimos Coffee suggested I try, The Colombia. I was nervous, shaky, and excited until he asked for my critique. This meant, the pressure was on!
"I took a sip and instantly wanted to NOT like it. Maybe the reason was, I am not a coffee enthusiast to begin with? The taste and smell used to make my stomach unsettled and nauseated. Is this normal? I took another sip and let it stay in my mouth a bit... how I drink my whiskey. I took another and another sip until I realized, this is tasteful. You definitely get the coffee smell and flavor, as soon as it hits your lips. However, I tasted no coffee as it went down my throat. Almost tea like in the consistency. The Colombia is very light, airy, with a woodsy like flavor similar to the consistently and flavors of tea. The more sips I took, the more taken back I am. The enjoyment becomes more wonderful than the last."
Tim wrote back, " Welcome to your first specialty coffee experience." I found myself with a crush. The Colombia, of course!
